Homemade Salsa

Uncooked Ingredients
Peppers & Garlic
Tomatoes
This is how it should start to look when it's done cooking.


This salsa's really good after it sits in the fridge for a few days. It tastes good the day you make it too, but letting it sit helps the flavor come out more. Here's how to make it:

Cut into halves 16 roma tomatoes
3 yellow onions
20-25 Serrano peppers (remove caps)

Lay these 3 ingredients along with 10 garlic cloves onto baking sheets and let roast on 375 for about 1/2 hour. The onions should look translucent, the tomatoes soft and the peppers should start to look black around the edges (see pictures above).

Add the ingredients to a blender with 1-2 tbsp of salt and 2-3 bunches of cilantro. You can always add more/less. I think I added more salt than the recipe said. Don't over blend it. If it starts to look pink, you've blended too much. I put mine in a bowl in the fridge to cool off. Two days later it was really good. You can also freeze it if it doesn't all get eaten in 
the first few days.
